I have struggled with my weight for as long as I can remember. You name it, I’ve tried it and as usual if the trick worked, it did not last long. Over the last few years I focused more on exercise and found out I actually enjoy it. I joined Orange Theory Fitness and although I lost some inches I was not seeing the results I wanted. I was confused why I was not loosing weight when I worked out at OTF twice a week and ran a minimum of 3 miles on the weekend and my diet was not terrible.
My husband suggested a nutritionist but since it was not my idea I promptly turned it down. Literally 1 week later Sammy was at my OTF location offering her services. After speaking with Sammy for 15 minutes I knew I wanted to try it and I had my first appointment scheduled the next week.
Sammy did not make feel like she was judging me for being overweight and she made me feel like she truly wanted to help me achieve my weight loss goals. I learned many things that first visit…. mainly not eating enough is just as bad as eating too much. I guess skipping breakfast and not eating lunch until 3:00 was a bad thing!
The snack and meal options were reasonable and were not items I do not like to eat which allowed me to keep on track and not give up. Within a month I was down 4 pounds and who knows how many inches- I just know my clothes fit much better and the compliments started to pour in.
Meeting every few weeks with Sammy gives me the accountability I need. She also encourages me to get out of comfort and try new foods that will add to the variety of my menu.

For over ten years, I had been in and out of weight loss programs including most of the national chains. From using so many different programs and my lack of knowledge about nutrition, I had a negative view about food. It was the enemy; and, it would be much more so when I had officially been diagnosed with diabetes mellitus.
After working out with a personal trainer and having increased dietary needs from the increase in activity, I was introduced to Mindy early 2006. I have been a professional golfer for 27 years and enjoyed a very competitive and active sporting youth including, baseball, tennis and hockey. As a consequence of this year round physical activity it was very difficult for me to put on (gain) any weight. I was 145 lbs. at my heaviest, but, as the saying goes “be careful what you wish for.”As my physical activities reduced and my metabolism slowed my wish came true and I grew to a record 210 lbs.

Thanks to Mindy. I’m sure I could not have lost 35 lbs and 18 inches without her. I got more insight at the lunch and learns, than I have in my almost 30 years of dieting. I’ve enjoyed the recipes and trying new foods; learning to fitness app you suggested and noticed that my carb intake % decreased about 15% since the beginning of this challenge. Three months ago, my blood work showed that I had hypo-thyroid and my BP was 142/89 (on medication) – low iron and something else was out of whack- it was recommended that I start Synthroid. I asked to do a repeat of the blood work because I was working with a nutritionist and exercising (drastic lifestyle change). Doc agreed and I repeated blood 2 weeks ago and went in this morning for the results. I have never seen Dr. G so excited at 8:45am. He said that I “fixed my metabolism”; my thyroid levels are PERFECT and my BP was down to 124/84. Not only do I not need to start Synthroid, but he recommended that in another 20 lbs! Trying to wean me off of the BP mediation. I could not be happier!!!!!You rock, Mindy. Thanks again!!!!!

I heard about Dietitians of Palm Valley from our fitness studio. When I was only working out (and not eating right) my athletic performance had increased but I wasn’t able to get my extra weight off. I came to Sammy & Dietitians of Palm Valley for our initial consultation at 215 pounds with a goal to get down to 190 pounds. Now, after a little over 4-months I’m down to 188 pounds. The best part is that it hasn’t been that hard! I haven’t had to make drastic sacrifices or deprive myself. I still eat my favorite foods–perhaps more in moderation. I truly have learned that healthy eating and fueling your body isn’t all that bad.
My name is Nick Deal and I run cross country and track for Creekside High School. I had lots of success during my freshman and sophomore years. I was in line to become one of the top runners in the state of Florida for the next two years. Then junior year hit. During that period, I was repeatedly sick or injured. In cross country season, I was sick once every two months. That may not sound that bad, but it truly messes with your training cycle. I thought it was due to allergies, so I was put on some medicine over track season to ensure that would not happen again. It worked, until Districts rolled around. I got sick again and I didn’t even make it out of Districts. I was seeded to score at the State meet. This was a huge disappointment and a low time in my life. After the successes from freshman and sophomore year, I didn’t understand why this was happening now. Especially at the most important time in my life, where colleges start recruiting. I knew changes had to be made. So that’s when I went to Kelsey. I had no clue what to expect when I went to see her, I just knew that my diet had to change somehow. Before I went to Kelsey, I was eating whenever I felt like it with 3 basic meals a day and a snack here and there. I would come home from school starving, and munching on everything I could until dinner, and then I wouldn’t be that hungry for dinner. Kelsey quickly saw the flaw in my diet: I wasn’t eating enough. She quickly changed my diet so that I was eating a more well-rounded breakfast, lunch, and dinner, with quality snacks in between all three meals, and a pre-run snack. I felt the impact instantly. I was more energetic and I wouldn’t come home hungry from school anymore. I felt like this was going to take me to the next step in the running world. It really did pay off. This past cross country and track season were better than I could’ve imagined. I finished 3rd at the state meet in cross country and my team won the state championship. It was a surreal moment to see all the hard work pay off. I improved my 5k personal record from 15:59 to 15:35. Most importantly, I was healthy for the whole season. Over track season, I just continued on doing what Kelsey told me to do. She helped me get a solid pre-race meal before meets, which was very tricky to do. At the state meet, I came in 3rd in the 3200m, 5th in the 1600m, and we won the 4x800m relay. We came in 2nd overall as a team. I improved my 3200 time from 9:34 to 9:12 and my 1600m time from 4:29 to 4:17. It was an unbelievable track season and senior year and I’m grateful that Kelsey could help me along the way.
